Apricot Kernel

What is Apricot Kernel?

An apricot kernel refers to the kernel of a species of Prunus, classified with the plum in the subgenus Prunus. Apricot kernels can sometimes be strong tasting and bitter, and are used in recipes for apricot jam, and Italian amaretto cookies and liqueur. They are also used in Italian liqueur amaretto and amaretti biscotti due to their distinct almond-like flavor. Essential oil pressed from apricot kernels is also used as a cooking oil.
